Quick Kaiser Rolls

Fluffy, homemade kaiser rolls made from a simple yeast dough. Great for breakfast, dinner, or sandwiches. You can make them with fresh or dry yeast

Fluffy, homemade kaiser rolls made from a simple yeast dough. Good for breakfast, dinner, or sandwiches. You can make them with fresh or dry yeast

Pour the lukewarm water into a large bowl, add the yeast and sugar. Mix and set aside for 5–10 minutes, until the yeast starts working slightly.

Add the flour, salt, egg, and melted butter or oil.

Knead the dough by hand or with a stand mixer with a dough hook for about 8–10 minutes, until it is smooth, elastic, and starts pulling away from your hands or from the sides of the bowl.

Cover the bowl with a cloth and let the dough rise in a warm place for about 1 hour, until it doubles in volume.

Transfer the risen dough onto a lightly floured surface and divide it into 10 equal parts.

From each portion, form a round roll and gently flatten it.

Place the rolls on a baking sheet lined with baking paper. Cover with a cloth and set aside for 30 minutes to rise again.

After rising, if the rolls are very tall, gently flatten them with your hand.

With a sharp knife, score a cross on the top of each roll.

Bake in an oven preheated to 180°C, top and bottom heat, for about 15 minutes, until the rolls are lightly golden.

After baking, transfer the rolls to a rack and let them cool slightly.

- If the dough is sticking a lot, add a bit more flour, but not too much so the rolls don’t turn out hard.

Tips

💡 Instead of butter, you can use 20 g oil.
💡 Before baking, you can brush the rolls with beaten egg or milk if you want a more shiny crust.
💡 The best are fresh, but after cooling you can also freeze them.

Warnings

⚠️ Don’t pour hot butter or hot water into the yeast, because the dough may not rise.
