Chicken with Cashew Nuts
This is a very quick Asian-style dish—slightly spicy, with a gently sweet sauce and crunchy nuts. It also tastes great with rice noodles or noodles instead of rice.
Method

In a bowl, mix soy sauce, mirin, honey, ground ginger, Sriracha sauce, cornstarch, and 4 tablespoons of water. Stir until you get a smooth sauce.

Heat a large pan or wok. Spray it with cooking spray or add a little oil. Add the onion, garlic, and mushrooms. Fry for about 5 minutes, until the onion softens and the mushrooms lightly brown.

Add the chicken strips and fry for 3–4 minutes, stirring often, until the meat is golden on every side.

Add the broccoli and pour in the prepared sauce. Cook over medium heat for about 3 minutes, until the sauce thickens, the chicken is evenly coated, and the broccoli stays tender but still slightly crunchy.

Add the cashew nuts, mix, and serve with cooked basmati rice.
Tips
💡 The finished dish can be stored in the refrigerator for up to 3 days. It can also be frozen after it has completely cooled.
